Coffee producers in Santo Domingo de la Capilla are very serious about picking only the ripest cherries, so it can take up to five pickings to fully harvest. After each picking, the cherry is pulped immediately and the parchment is fermented for approximately 12 hours and then washed and dried. While it is drying on patios it is turned several times, which helps to achieve the region's particularly beautiful shade of green.

Even better than the previous harvest

I have been roasting coffee since 2001 and I've worked with just about every importer. When I roasted the first Capili harvest from Genuine Origin I - and my customers - loved it. I've got to say, this year's crop is even better! The lemon-lime flavor note is spot on. This is a beautifully complex coffee. I'm definitely buying more!!!

Highly recommended!

Great company, excellent coffee! This is one of the most surprising coffees I've tasted in the past few months. The chocolate and caramel did in fact have the lemon-lime note that the cupping notes call out! Full City is going to bring out a tasty mix of sweet chocolate and the subtle lemon-lime accents...I love Genuine Origin

A Caramel treat!

Wow. Delicious.......Caramel instant up front notes recognized. Medium bodied which suits the flavor profile. Reminds me of a Brazil / Central American combination. Very very very nice.

Just ok imo.

I have tried all possible roasts with capili, I get the most chocolate/mild citrus notes right before city roast. I am not too enthusiastic about Capili, not a bad coffee at all, but good coffee is a couple of steps above. I use it as breakfast blend 50/50 with a decent Kenya to spike up the floral and citrus notes.

Very nice

Very nice, surprisingly milk chocholaty and caramel. Good as city, city plus and full city. Best at city plus.
