Huehue is one of the non volcanic coffee producing regions of the country. Due to its topography, there are multiple micro climates which are perfect for coffee production, giving the coffee nice fruit notes. Finca Joya Grande was established in 1976 as a very small coffee plantation operation. Access to the farm at that time was very limited and fertilizers and nurseries had to be transported by horses. Given the farm's topography, coffee is the only agricultural product that can be planted but with the advantage of a superb quality production. All coffee pulp resulting from the wet mill process is utilized as organic fertilizer. The farm works under a strict shade-grown policy and also has forest conservation areas that provide shelter to many native fauna and flora species.
Finca Vasquez was established in 1980 when Don Jose Vasquez moved from Colotenango to the coffee lands La Libertad, Huehuetenango. He moved to this region, looking for better opportunities and placed a bet on his beautiful farm. The current owners of the farm are Genaro and Juan Vasquez (son and grandson of Don Jose). Both of them are quality oriented, keeping the same practices and varietals as Don Jose once did.
Finca La Maravilla was acquired in 1997 from an extension of El Injerto II. The property was abandoned, but with dedication the owner and his father converted the land into a beautiful and well-maintained coffee operation. To not cause any environmental impact in the farm, all weed control is done by hand, no herbicides are used. The farm has participated many times in CoE, being ranked in the top 10 a couple of times.
The much-admired growing region of Huehuetenango often produces coffees with balance and finesse, both of which this Candelaria has in spades. Its aroma is deep-toned, sweetly savory, translating to notes of cocoa nib, green grape, maple syrup, and a bittersweet floral reminiscent of orange blossom. (This intriguing savory element is perhaps due to Pacamara in the mix.) This washed-process coffee has a viscous, syrupy body and gentle, round acidity. The finish is crisp and delicate, with notes of green grape and a hint of fresh cedar.

Guatemalan producers are constantly looking for better growing conditions: richer soil; advantageous micro-climates; and ideal shade conditions. Farmers are investing in moving to higher grounds to increase their options for growing specialty coffees. Flavor is this coffee is amazing!! It’s like a milk
<br>Chocolate bar! Great sweetness throughout the roast. We sampled it from right about first crack to second crack. Solid all the way through. As a light roast it still has a green apple flavor that transitions to red apple
<br>As the roast continues.
<br> Now, the ONLY reason I won’t give this 5 stars is bean size inconsistency. We got a huge array in sizes. As small as pea berry and and very large beans. So as they roast, the small beans develop faster and darker.
<br> Now, that said, We are using this coffee as a single origin espresso. So, the flavor is still incredible!
<br>Our only concern is subtle inconsistencies in roasts because of bean size :-)

After brewing 5 of the 2021 Guatemalan's for week, I ordered Candelaria today. They were all delicious, but I kept reaching for the Candalaria bag or the unmarked triangulated cup that turned out to the the Candelaria. <br><br>The sweet chocolate is undeniable, but what kept me coming back was this intriguing finishing note--maybe floral--that delighted me every time it presented itself.<br><br>I imagine that it will work equally well as drip and a SO espresso. Very pleased with this coffee. Thanks again GO!
