Mexico Chimhucum Chiapas Semi-Washed SHG/EP 2022
About the Coffee
This coffee comes from smallholders located in the town of Chimhucum high in the Los Altos mountains of Chiapas. Chimhucum, meaning "Two rivers" in the Tzotzil language, as a micro-climate is characterized by a wet and cold climate for much of the year.
Growers here in Chimhucum take great care to respect the land. Coffee is shade-grown and sustainable practices such as composting and water treatment are employed. The farmers here pay equal attention to processing. In this lot, Sarchimor, Caturra, and Catuai varietals were hand-depulped and processed using the semi-washed method. During this process the producers fermented the coffees for between 6 – 12 hours resulting in exceptional fruit sweetness and medium-bright acidity.
