Jaguar Honey’s process offers some advantages compared to other drying processes. One important difference is that water usage is lower. Additionally, due to a shorter fermentation period, the coffee acquires an acidity halfway between natural and washed coffees. In other words, the Honey process enables the production of coffees with some of the unique characteristics of natural processed coffee in less time and with lower risks of unexpected effects such as over-fermentation.
As part of Volcafe’s agreement with Fundazoo, a donation of $1 is made for every quintal sold to finance the organization’s efforts in preserving Jaguars in Costa Rica.

Love the honey

We love this honey process! We've been really pleased with the quality of this coffee. We have been roasting at FC.

Sweet Jaguar Honey

I'm not a professional taster. I simply go by personal preference and smell. Just roasted our first sample 2 nights ago...and in anticipation frankly couldn't wait to allow it to "settle" or off gas the following morning. The smell is clean and mellow...I'm not sure I can accurately describe the multi aroma coming from the cup. The taste as well is clean and mellow. There is absolutely zero aftertaste or bitterness in the palate. That being my personal most important test. The second day was obviously better then the 1st.. and as I sit writing this, I am tasting the last in my cup, cold now, with the taste of a slight chocolate infusion. This is great stuff !

Great honey process!

I am strictly a home roaster. I roast with hottop at 300 grams a roast. As a test I dumped the beans during first crack. They gave a smooth cup of coffee the next morning. I would rate this a 5 except for the few quakers. It's my understanding these are common with honey process, but still felt I should mention them as it could be a deal breaker for larger batches. I am very happy with these beans and would definitely recommend them!
