Sumatra, the largest island in Indonesia, is legendary in the specialty coffee world for producing some of the boldest and most distinctive cup profiles available. Its highlands, volcanic soil, and equatorial climate provide ideal growing conditions for Arabica coffee, much of which is cultivated by smallholder farmers in remote areas.
Sumatran green coffee is best known for its signature processing method: Giling Basah (aka, wet-hulling). This traditional technique gives Sumatra coffee its hallmark characteristics—low acidity, deep body, and rich, earthy flavors. The processing method also imparts savory herbal notes, soft tobacco undertones, and a smooth, syrupy mouthfeel that makes Sumatran coffee truly one of a kind.
We often source Mandheling coffees from Northern Sumatra, one of the most well-known regional names in Indonesian coffee. We also look for the highest quality coffees. You’ll see notes like G1 which stands for Grade 1, the highest quality designation in Indonesian coffee. You’ll also see, TP for Triple Picked—a labor-intensive sorting process that ensures exceptional cleanliness, uniformity, and visual appeal in the green coffee.
