Natural Processing in Coffee
Natural “dry” processing is a traditional processing method that enhances the inherent flavors of coffee beans. In this approach, coffee cherries are dried whole without water or machines.
The process begins with carefully picking the cherries, which are then floated in water to remove defects. After sorting, the cherries are laid out on patios or raised beds to promote airflow and even drying. Producers diligently rake and turn the cherries throughout the day to prevent spoilage. This meticulous process typically takes two to six weeks. Once dried, the cherries are hulled, dry milled and prepared for shipment.
Roasters love Natural Process coffees for their vibrant flavors, intensely fruit-forward notes and complex sweetness. Roasters are often on the look out for “fruit-bombs” and blueberry notes.
