Gayo coffee normally refers to the Takengon area, and is located in the highlands of Aceh near Lake Tawar. Our coffee comes from Takengon and its surounding areas. Temperatures around the Takengon area are much cooler due to its altitude, hence it has very good conditions for coffee plants. The normal farm size here will be around 1-2 hectares, and they are family operated. Gayo coffee is semi washed in its processing, which means that the parchment is hulled while still having a very high moisture content, as contrasted with fully washed coffee where they dry the parchment to 12 percent moisture. This process also uses sun-drying patios which many people believe to give Aceh coffees that unique, earthy yet pleasant taste to it. Due to its high dependency on sunlight, farmers and collectors have to be very careful, making sure that coffees are not exposed to weather elements which can ruin them. It is truly a unique way of coffee processing, balancing the natural elements while using simple and traditional equipment. A lovely, bright clean cup with in which caramel and chocolaty aromatics meet complex flavors of ripe fruit, sweet cinnamon, and a brown sugar aftertaste.
