Organic Tolima Multicoop Agropecuarias

Grown by members of the Multicoop Cooperative Agropecuarias in the mountains of southern Tolima, this organic coffee represents the collective work of more than 1,100 smallholder producers cultivating coffee between 1,600 and 2,000 meters above sea level.

 

The cooperative brings together independent farming associations across the Chaparral and Río Blanco regions, helping producers access specialty markets while maintaining their local traditions and autonomy.

 

This lot is composed of traditional Colombian varieties including Colombia, Castillo, Caturra, Red Bourbon, and Pink Bourbon. Cherries are selectively handpicked, fermented for 18 to 48 hours, thoroughly washed, and then dried under the sun in covered parabolic dryers, a process that reflects generations of coffee-growing knowledge.

 

In the cup, expect a classic Colombian profile featuring balanced acidity and notes chocolate, sweet brown sugar, and stone fruit. The result is a sweet, approachable coffee with richness, complexity, and a clean finish.

 

Certified Organic, this coffee supports a cooperative model that promotes environmental stewardship, farmer prosperity, and long-term sustainability throughout the Tolima region.

 

Common Coffee Varietals in Colombia

The most common Arabica varietals that grow in Colombia are Typica, Bourbon, Caturra, and Maragogipe, with three rust-resistant Cenicafé-developed strains – Tabi (Typica x Bourbon x Timor hybrid), Colombia (Caturra x Timor hybrid), and Castillo (also Caturra x Timor hybrid) – that are usually found on Colombian coffee farms.
