Cerro El Centro & Brumas del Zurquí

The El Centro farm is part of Brumas del Zurquí, a family-owned group of farms spanning four generations of coffee producers. Located in Costa Rica’s Central Valley at 1,600 masl, the farm benefits from volcanic soils, cool weather, and a focus on regenerative practices. With deep roots in the Gómez Chávez family and guided today by Juan Ramón Alvarado Rodríguez, Brumas del Zurquí is a leader in Costa Rican specialty coffee production.

 

Villa Sarchi Variety

This lot is made entirely of Villa Sarchi variety coffee, a natural Bourbon mutation discovered in Costa Rica’s West Valley. Compact in stature, Villa Sarchi is well-suited to high-altitude environments and is known for its sweet, balanced, and fruit-forward cup. It is one of Costa Rica’s most iconic native varieties, valued for both its quality and its historical role in the country’s coffee development.

 

Natural Processing

The natural process involves drying whole cherries in the sun before hulling, a method that amplifies fruit intensity and body. At El Centro, cherries are hand-selected and left to dry in the sun where they are turned frequently to ensure even drying. This process brings out notes of ripe fruit, layered sweetness, and a smooth, winey complexity that highlights Villa Sarchi’s inherent strengths and the Central Valley’s terroir.
