Ahuachapán Green Coffee Beans
Western El Salvador is a celebrated agricultural region, with the department of Ahuachapán at its heart. Nestled near the Guatemalan border, Ahuachapán is known for its coffee production. Part of the Apaneca-Ilamatepec mountain range, the area boasts many of the El Salvador’s most prestigious coffee farms.
Café Santa Teresa operates as a network of farms within the Ahuachapán department. The partner farms cultivate a diverse range of shade-grown coffee varieties, including Bourbon, Pacamara, Sarchimor, Icatu, Geisha, Castillo, and Tabi. Four farms contributed to producing this washed lot. They are:
- Finca Montecristo in Ataco at 1,300 to 1,350masl
- Finca Los Nogales in Ataco at 1,300 to 1,350masl
- Fincas Altamira 1, 2 & 3 in Apaneca at 1,300 to 1,400masl
- Finca Santa Teresa next to Termales Santa Teresa at 1,200 to 1,300masl
Washed Process Coffee in El Salvador
This coffee was washed (wet) processed at Bendix Mill. The pulped coffee beans were fermented to remove any remaining mucilage, dried on patios in the sun until it reached the optimal moisture level. Washed processing has become widely popular and prized for its “clean” cup and undiluted reflection of the terroir of the coffee. The processing method allows the growing conditions, the region, and the true character of the coffee to shine through.
El Salvador Coffee Production
Big things come in small packages. In El Salvador’s case, this modest-sized country has made a name for itself regarding its green coffee. Although its turbulent history has redefined El Salvador’s approach to coffee today, its growing reputation for quality over quantity may be the key to the country’s future as a celebrated coffee origin.
That said, El Salvador is struggling due to climate change, lack of labor, and the absence of a long-term strategy on the national scale to improve sustainability and profitability for coffee farmers.
