Grown in the renowned highlands of Guji Hambela, this Washed Guji G2 coffee captures the elegance and complexity that have made Ethiopian coffees sought after around the world. Produced by 346 smallholder farmers, the coffee is cultivated in a traditional garden coffee system, where trees grow near family homesteads beneath a canopy of Enset, Albizia, Acacia, Militia, and Polyscias shade trees. This biodiverse environment supports healthy coffee production while contributing to the region’s rich ecological landscape.

 

Situated at elevations between 1,800 and 2,200 meters above sea level, the farms benefit from fertile clay soils, cool temperatures, and ideal growing conditions that allow cherries to mature slowly and develop exceptional sweetness and complexity. Local varieties including Kurmue, Dago, and Wolisho are carefully cultivated, producing coffees distinguished by vibrant acidity, layered aromatics, and remarkable balance.

 

At the Birbirsa Processing Site, meticulous attention is given to every stage of production. Only ripe cherries are selected and hand-sorted before being processed with a disc pulper. The coffee then undergoes 36 to 48 hours of biological fermentation, allowing the mucilage to break down naturally. After fermentation, the parchment is graded, soaked to enhance cup clarity, and dried first under shade and then on raised beds for six to seven days until optimal moisture levels are achieved. A comprehensive traceability system follows the coffee throughout the process, ensuring transparency and consistency from farm to export.

 

The result is a cup that showcases the hallmark characteristics of Guji coffee: a pleasant aromatic fragrance, piquant acidity, floral undertones, and subtle spice. Sweet complexity, a ligh bodied, and a lingering finish create a refined and memorable drinking experience that highlights the unique terroir of Guji Hambela.
