Ethiopia Natural Process Organic Green Coffee Beans

Ethiopia is the original home of Coffea arabica, and thousands of different heirloom varietals are still growing wildly among the mountainous forests. Ethiopia green coffee is celebrated for its bright fruit and floral flavors, expressed with exceptional acidity and sweetness. Coffee grading in Ethiopia is based on the combined result of physical bean qualities and cup qualities. Grades range from 1 (high) to 9 (low).

 

Much of the coffee grown in Ethiopia is organic by default. That's because there is so much nutrition in the soil, cultivated by natural forest debris and nurtured by a variety of microclimates, with tall forest canopies providing shade over the coffee trees.

 

Guji Green Coffee Beans

This organic green coffee comes to us from the Guji zone, a region that stepped into the spotlight for its unique and distinctive coffee characteristics that set it apart from its neighbors, Yirgacheffe and Sidamo. Since the 10th century, coffee has played a role in the culture of the Oromo people of the Guji region. Centuries later, coffee is still farmed with the same traditional growing methods in the fertile forest soil.

 

Ripe, red coffee cherries were hand-picked across 450 smallholder farms and delivered to the Dambi Uddo Station, where they were floated in water first to remove underweight and damaged cherries. After cleaning, the cherries were spread across raised beds in a single layer for drying, where they were turned regularly until they reached the target moisture level. Natural dry processing is the norm in Ethiopia and gives rise to delicious flavors like the strawberry, dried fruit, rose, and green tea notes featured in this lot.
