Yirgacheffe Chelchele Natural Organic

From the renowned coffee-growing highlands of Gedeb in Ethiopia’s Yirgacheffe region, this Organic Natural coffee showcases the vibrant character and complexity that have made Yirgacheffe one of the most celebrated origins in the world. Produced by the Worka Chelchele farming community and washing station, the coffee is grown in mountainous terrain at elevations ranging from 1,900 to 2,300 meters above sea level. The combination of high altitude, loamy soils, and cool conditions allows coffee cherries to mature slowly, developing exceptional sweetness and layered aromatics.

 

The coffee was cultivated using Ethiopia’s traditional garden coffee system, where smallholder farmers carefully tend heirloom varieties near their homes and farms. Located in the heart of the Gedeo Zone, the region’s fertile landscape and generations of coffee-growing expertise contribute to the distinctive quality found in every harvest.

 

Only ripe cherries were selected during harvest. Upon delivery, the cherries were carefully at the processing station. After flotation removed lower-density fruit, the coffee was processed using the traditional natural (dry) method, which allowed the beans to dry inside the fruit and absorb its rich sugars and flavors. Cherries were then dried on raised African beds under shade for 18 to 24 days, promoting slow and even drying while preserving clarity and complexity in the cup. Lot separation and traceability practices were maintained throughout the process to ensure quality and consistency.

 

The result is a coffee that beautifully expresses the terroir of Yirgacheffe: sweet and fruit-forward, with bright acidity, and a refined sweetness. The natural process enhances body and fruit character while maintaining the elegance and clarity for which coffees from Gedeb are prized.
