Chiapas Altura Superior SHG EP is a regional lot sourced from the highlands of Altos, Chiapas, one of Mexico’s most celebrated coffee-growing regions. This lot brings together coffees from various smallholder producers, including area farmers like Mario Santiz Lopez of Finca Vista Hermosa. Working on small family farms throughout the region, these producers cultivate coffee in the rich volcanic soils and cool mountain climate that have made Chiapas a cornerstone of Mexican specialty coffee production.
This coffee is classified as Altura Superior SHG EP, designations that reflect Mexico's quality-focused grading system. SHG, or Strictly High Grown, indicates that the coffee was cultivated at high elevations where cooler temperatures slow cherry development, contributing to greater density and complexity in the bean. EP, which stands for European Preparation, signifies that the coffee has been carefully sorted to remove defects and provide a more consistent cup profile. Together, these grades represent some of the highest-quality coffees produced in Mexico.
The cup profile highlights everything coffee lovers have come to expect from a classic Chiapas offering. Notes of milk chocolate, almond, brown sugar, and citrus create a balanced and approachable cup with comforting sweetness, nutty undertones, and a bright, refreshing finish.
Washed Processing
After harvesting, the coffee undergoes the traditional washed process. Producers remove the coffee cherry’s fruit before fermenting and washing the beans, a method that emphasizes clarity, sweetness, and brightness in the cup. Washed processing is widely used throughout Chiapas, helping showcase the region’s unique terroir while creating the clean, crisp character that has made Mexican coffees popular among roasters around the world.
Catuai and Typica Coffee Varieties
This lot is composed primarily of Catuai and Typica varieties, two cultivars that have played an important role in Mexican coffee production for generations. Typica is celebrated for its classic coffee character, elegant sweetness, and refined cup quality, while Catuai is valued for its resilience, productivity, and balanced flavor profile.
