La Bastilla Maragogype Washed Process Green Coffee Beans

Grown at the high elevations of Finca La Bastilla in Nicaragua's renowned Jinotega region, this exceptional micro-lot showcases the distinctive Maragogype variety, often referred to as the "Elephant Bean" because of its unusually large cherry and bean size. Hand-picked at peak ripeness and carefully washed at La Bastilla's on-site mill, this coffee earned an impressive cup score of 88 points. The result is a refined and complex profile featuring notes of dark chocolate, caramel, hazelnut, dried plum, and pomegranate.

Washed Coffee Processing

In the washed process, ripe coffee cherries are sorted and depulped shortly after harvest. The seeds are then fermented to remove the remaining fruit mucilage before being thoroughly washed and dried. This method emphasizes clarity, balance, and terroir, allowing the unique characteristics of the variety and growing environment to shine through.

Washed coffees are prized for their clean, transparent cup profiles and vibrant acidity. By removing the fruit before drying, the process highlights the coffee's inherent sweetness, structure, and complexity while maintaining exceptional consistency from harvest to harvest.

La Bastilla Coffee Estates

La Bastilla Coffee Estates is located in the northeastern department of Jinotega, Nicaragua, near the Cerro Datanlí-El Diablo Natural Reserve and Lake Apanás. The estate benefits from deep volcanic soils, abundant biodiversity, and ideal growing conditions that have made the region one of Nicaragua's most respected coffee-producing areas.

Since 2003, La Bastilla has maintained Rainforest Alliance certification and continues to pursue excellence through sustainable farming practices and meticulous quality control. Maragogype Coffee Variety

Maragogype is a rare mutation of the Typica variety that was first discovered in Brazil and has become famous for producing some of the largest coffee beans in the world. While yield can be lower than other cultivars, the variety is prized for its unique cup quality, elegant body, and distinctive flavor complexity.

When grown at high elevations and carefully processed, Maragogype develops a refined sweetness and layered fruit character. In this lot, rich notes of dark chocolate and caramel are complemented by hazelnut undertones and a vibrant fruit complexity reminiscent of dried plum and pomegranate.

Coffee Bean Quality

This Strictly High Grown (SHG) coffee was cultivated at elevations exceeding 1,200 meters above sea level. The cool mountain climate slows cherry maturation, allowing more time for sugars and nutrients to develop within the seed. This extended growing period contributes to greater density, sweetness, and overall cup quality.
